 I  have  a  60x30x45  h  planted  tank  with  dwarf  rainbows  and  neon  tetras  (tons  of  pond  snails  too).  Its  an  open  top  aquarium.  I  introduced  about  8  RCS  a  month  ago.  I  found  2  of  them  on  the  floor  on  two  different  occasions.  I  have  seen  people  keep  shrimps  in  open  tank.  I  am  not  sure  what  is  driving  these  to  jump  out  of  the  tank.
 I  reduced  the  flow  from  the  HOB  filter  assuming  that  high  flow  may  be  one  of  the  reason,  but  I  am  not  sure  what  could  that.  I  have  not  seen  any  fish  pick  on  them  either.

 Are  you  seeing  a  pattern  in  their  deaths?  Like  during/after  water  changes  etc?
 
 Couple  of  possible  reasons  I  can  think  of  from  my  experience  with  shrimp  jumps/deaths:
 1.  Bad  water  parameters
 2.  Not  enough  hiding  places  resulting  in  stress  and/or  being  picked  by  fish.  We  might  not  see  it  up  front  but  we  cant  rule  out  the  possibility  either.  Even  if  a  curious  tetra  gets  too  close  to  comfort,  shrimps  might  try  to  escape  and  jump  out  of  fright
 3.  One  of  my  good  friends  from  IAH  once  told  me  the  waterfall  effect  from  the  HOB  might  be  causing  the  jumps  although  I  dont  remember  the  exact  logic  behind  it.

 Fishes  could  be  one  of  the  reason  for  such  shrimp  deaths.  Except  for  Otocinclus  no  other  fishes  are  known  to  be  friendly  with  shrimps  or  shrimplets.   
 
 Shrimps  usually  jump  in  an  attempt  to  evade  the  threat  (usually  from  fishes),  eventually  ending  up  on  ground  when  they  are  staying  on  top  of  tanks.  Make  sure  to  provide  lot  of  hiding  places  to  avoid  such  accidents.

 Just  be  careful  when  u  do  water  change.  At  times  they  sit  on  siphon.  When  u  take  tube  out,  they  get  thrown  out  as  well.
