ADA  leaches  ammonia  like  hell,  did  you  use  power  sand  also,  I  think  it  as  nitrates  also.
Nitrites  are  intermediate  product  of  nitrogen  cycle,  maybe  you  will  never  find  them.
Plants  love  ammonia,  so  they  will  absorb  all  ammonia,  but  then  algae  also  loves  ammonia.
Do  large  water  changes  every  3  days,  or  you  will  have  algae.

do  i  add  corals  and  shells  to  tank  or  are  plants  okay  with  6.4  ph?

ph  is  least  of  your  problems,  don't  fiddle  with  it.
Change  water,  co2,lights  will  do  the  job.
What  are  your  lights  and  co2  setup

light  is  1x  32w  cfl,  i  am  seeing  really  large  growths  of  plants,  mostly  fast  growing  stem  plants  and  a  big  heap  of  java  moss

not  planning  on  co2  for  a  while,  should  i  add  more  light?

When  plants  arrive  they  have  reserve  nutrients  stored  in  them,  so  initial  growth  is  good  ,  it  is  no  indication  of  conditions  in  tank.
Your  lights  are  too  low,  with  these  lights  you  can  have  anubias,  ferns,  low  light  plants.
Stem  plants  will  not  do  get  in  this  setup.
