These  are  supposed  to  compatible  with  small  fish  and  even  do  not  touch  plants.
Since  this  is  the  first  time  I  have  them  it  will  take  me  at  least  a  year  to  study  them  and  post  meaningfully.
Hopefully  God  willing  maybe  to  even  breed  them  eventually.

Trevor  ,  great  looking  crays.  I  have  a  few  wild  caught  Cambarellus  shufeldtii  for  some  time  now.  I  would  not  trust  them  will  small  fish.  I  have  seen  them  hunt  and  kill  Axelrodia  riesei  in  my  tank.  But  they  are  pretty  entertaining  once  you  give  them  the  right  conditions.

Hey  Trevor,  post  some  molting  pics  also.
Didn't  realize  how  small  that  crayfish  was  till  I  saw  that  exo  on  your  fingertip.

I  have  no  doubt  the  cray  fish  are  female,
Now  it  is  a  known  fact  that  anything  female  is  most  attracted  to  you,  the  charging  explained.

Sorry  for  the  late  reply  did  not  see  this  till  today.
I  believe  the  link  the  Seetharam  posted  answered  your  questions.  I  had  a  berried  female  in  20  G  about  a  month  back.  This  tank  is  more  of  a  holding  tank  for  my  fish  and  extra  plants.  So  most  probably  the  babies  did  not  survive.

 Thanks
